CSA Week I Dunno -- Weird Stuff

Kohlrabi. (image here) We shredded them and made savory pancakes (latkes?)

Eggplant (ok not weird, just very not usual for us).
--Roasted eggplant parm. Used this from Mario Batali as a starting place.
--An eggplant ziti suggested by @devinemissk on twitter
--Grilled eggplant suggested by @kgmkelsey on twitter. (Tips from the google gods: soak thick slices in salted water for 30 minutes, brush with olive oil on one side, season, grill oiled side down 5 minutes, brush with oil & season & flip).

Scallions
--Chop, freeze, put in an empty plastic water bottle, store in freezer, use to shake out chopped scallions whenever needed for stirfrys. Got the idea... somewhere on the webs?

Garlic scapes. I think we wilted them with bacon?

Fried green tomatoes. Because. Fried. Green. Tomatoes. OMG.

This week: carrot greens. Maybe a pesto?

Other stuff we've gotten:
So. Many. Blueberries. Frozen lots of them.
Raspberries
Tomatoes.
Corn.
Cabbage.
Lettuces.
Garlic
Swiss chard.
Bok Choi
Squash
Honey
Cucumbers
Beets
Spanish Green Beans (blanched and sealed in bag and frozen)
Melon.
Arugula
Apples
Carrots
